Mama's Mellow Garden Salsa - Canned or Fresh

Quantity: 10-12 half pint jars


This recipe calls for:

6 plum tomatoes (diced)

1 bell pepper (diced)

1 large onion (white or red, diced)

1 bunch cilantro (plucked)

1 tbsp garlic

cayenne pepper (to taste)

red pepper flakes (to taste)

garlic salt (to taste)

Instructions:

Mix it all together in a medium sized bowl and enjoy with tortilla chips!

Storing:

Insert your jars into a medium-sized pot filled with room temperature water. 

Bring to a rolling boil and boil the jars and lids for 10-15 minutes. 

Remove the jars from the pot and fill them with salsa, leaving a 1/2" headspace. 

Place the lid on each jar and lightly spin it until it no longer spins freely, then do one quarter turn.

 Place the jars back into the pot and boil for another 10-15 minutes.

 Remove the jars and place them on the counter to cool down. 

You will know your jars have properly sealed because you'll hear a popping sound and see the middle bubble flatten. 

Once the jars have sealed, remove the rings and leave just the lids on to ensure a proper seal. 

Allow your jars a few hours to cool before serving. 

The jars are now shelf-stable for a few months unopened. After opening a jar, make sure to keep it refrigerated. Enjoy!
